The fresh fruits season is here and we can finally bake with fresh fruits and forget about the frozen ones for a while. This time I am happy to share with you my mother’s recipe of fruit cake. It’s simple to make, very fluffy and you can add whichever fruit you like.
What you need:
6 eggs
200 gr of butter
250 grams of sugar
250 grams of flour
12 gr of baking powder
1 tsp of vanilla essence
How to do it:
You will need to work with two separate compositions and mix them together at the end. This way, you can be sure your batter will be fluffy enough after the baking.
First of all, separate the eggs into egg whites and yolks.
In a clean bowl add the 6 egg whites over 200 gr of sugar. Mix them well until a firm foam results and put the composition aside.
In another bowl mix together the 6 yolks with the rest of the sugar (50 gr) and after you have a nicely foam add the butter as well. Mix everything together.
When the two compositions are ready, incorporate the egg white foam with the yolk composition. Add over the flour and the baking powder and mix them for the last time.
After you lay the batter into the tray, place your chosen fruits over it. If you want your fruits to remain in the batter, don’t push them in, just leave them on the surface. They will sink during the baking process anyway. I pushed mines in order to have them at the bottom of my cake. It’s your choice!
